Searching for a carrot salad

I searched the recipe files but did not see a carrot salad.

 

A few years ago I ate at a vegetarian list with a dear friend. Our

carrot salad was very unusual but very delicious. I asked how it was

made; of course they woudln't tell me but to say there was peanut

butter in it.

 

It's been too long, I can't begin to say how it tasted or looked. I

was surprised that there was peanut butter in it; I just remember it

tasted like no carrot salad I'd ever had.

 

Does anyone have a recipe like this or can find anything like this in

one of your vegetarian books or magazines?
