Guest guest Posted August 21, 2006 Report Share Posted August 21, 2006 African Yams and Squash (Futari) 2 tbsps. vegetable oil 1 onion, cooked, peeled, cut into 1 inch pieces 1 lb. winter squash, peeled, cut into 1 inch pieces 2 yams or sweet potatoes, peeled, cut into 1 inch pieces 1 cup coconut milk 1/2 tsp. ground cinnamon 1/4 tsp. ground cloves Heat oil in a heavy nonstick skillet over medium heat. Sauté onion 3 to 5 minutes, or until softened. Add remaining ingredients and salt to taste. Bring to a boil, stirring occasionally. Reduce heat to low, cover and simmer 20 to 25 minutes, stirring occasionally until potatoes are tender. Remove cover and simmer another 5 minutes until vegetables are thoroughly cooked. Serves 6.
