Spinach & Sweet Potato Risotto Recipe

I made this for supper last night - quick and tasty! I did

substitute canned sweet potatoes and froz spinach as I didn't have

any fresh.

 

Spinach & Sweet Potato Risotto

 

 

Ingredients:

1 package of risotto

1 medium sweet potato

3-4 Tbsp. olive oil

2 cups fresh spinach, washed well

Parmesan cheese (opt.)

Instructions:

Prepare risotto according to package directions. In a separate pan,

sauté a medium-sized, diced sweet potato in 3-4 Tbsp olive oil until

soft and nicely browned (about 10 minutes), add 2 cups of fresh,

washed spinach. Toss gently and let the spinach wilt in the pan. Salt

and pepper to taste. Mix spinach mixture with risotto. Garnish with

grated parmesan cheese.
