Guest guest Posted August 10, 2006 Report Share Posted August 10, 2006 Quatre-Epices Four Spice Mix 1 heaping tbsp. black peppercorns 2 tsps. whole cloves 2 tsps. freshly grated nutmeg 1 tsp. ground ginger Grind the peppercorns and cloves together in a spice grinder or coffee mill. Remove to a bowl and add nutmeg and ginger. Mix thoroughly. Funnel into an airtight jar and store in a cool, dark place. Use to season soups, stews, and vegetables. May be doubled or tripled.
