Baked Kale Chips 2 bunches of kale 1 Tablspn. apple cider vinegar 1 Tablspn. salt 3 Tablspn. olive oil Wash and drain kale. Cut end stems off. Cut kale into 2-3 inch pieces. Mix vinegar, oil and salt in a large bowl. Add kale and mix very well to coat. Place on baking sheets lined with foil for easy clean up. Bake between 350 and 375 degrees until crispy, about 20 mins. Times varies depending on size you cut for your chips. edges get done a little faster. Enjoy as your would potato chips, sprinkle more salt if needed... I think this was too much salt, but then I could also be using less than two bunches?? I cleaned up a big bowl of kale... I know I am going to be making this sooo often.. it's yummy, but I'll make it with 1 teaspoon of salt rather than tbsp.. it reminds me of something that I had in NYC at Zen Palate... " Zentastic Tofu " yummm (it was baked kale with tofu... I might attempt to do something along these lines.. I think the blandness of the tofu might meld nicely with the salty chips!
