Guest guest Posted September 8, 2006 Report Share Posted September 8, 2006 Pumpkin Quiche 1 unbaked pastry shell 1 cup finely shredded cheddar or colby cheese olive oil 6 green onions, finely chopped 1/2 teaspoon finely ground pepper 1/2 teaspoon ground ginger 3 eggs, separated 3/4 cup milk 1 cup cooked mashed pumpkin Preheat oven to 375 degrees F. Sprinkle 1/2 cup of the cheese over the pie crust bottom. Drizzle olive oil in a large skillet, heat and saute the green onions for about 2 minutes. Remove from heat. Add the spices, egg yolks, milk, 1/2 cup cheese and pumpkin and mix. Whisk the egg whites until stiff and fold into mixture, then pour into the pie crust. Bake in the preheated oven for 10 minutes, then lower heat to 350 degrees F. and bake 30 more minutes. Remove from heat, cool slightly and slice.
