Zatar is a spice blend whose main ingredient is sumac. I had no idea it was used in felafel. It usually contains sesame seeds, ground sumac, thyme and salt, but I am pretty sure there are different variations depending on the maker. Guest guest Posted September 21, 2006 Report Share Posted September 21, 2006 Here is a homemade Zatar recipe from the Food Network: Zatar: 1/2 cup minced shallots 1/4 cup sumac*** 3/4 cup toasted sesame seeds 1/2 cup chopped Italian parsley leaves 1/2 bunch chopped fresh thyme leaves 1 1/2 cup extra-virgin olive oil Mix zatar ingredients to combine. Set aside at room temperature to blend flavors for a bit. ***Sumac is a ground seed that has a sour, tart and salty taste. It is used a seasoning on rice, marinades and rubs commonly used in Indian, Turkish, and Persian cuisine. Guest guest Posted September 21, 2006 Report Share Posted September 21, 2006 Hi RObin, Found a Zatar recipe made with easy to find ingredients! • 1 1/2 Teaspoons Dried Thyme • 1 Tablespoon Sesame Seeds • 3/4 Teaspoon Dried Marjoram • 1/4 Teaspoon Allspice • 1 1/2 Tablespoons Almonds -- ground • 1 1/2 Tablespoons Lemon Zest -- grated • 3 Tablespoons Olive Oil Of course, as part of a bread machine recipe!!
