Wow Wanda! Are ALL these TnT?? You must have alot of Rhubarb available to

you! :) Thanks for sharing them - I can hardly wait for rhubarb to go on

special again.

 

I have just recently rediscovered it- I didn't like it growing up- but now I

LOVE it.

Just paid $7 for 750 grams of the stuff last week- that is about 1½ lbs. So

it is a once-in-awhile treat. I made a rhubarb apple crisp - but didn't

follow a recipe.

If that interests anyone- I can write down what I did do and send it in to

share.I didn't get a chance to read all the posts for the last 10 hours or

so- so there might be one already here! :)

Rhubarb Bites

> 2 cups diced rhubarb

> 1 cup sugar

> 1/2 cup shortening

> 1 cup brown sugar

> 1 egg

> 1 teaspoon baking soda

> 1/4 teaspoon salt

> 1 teaspoon cinnamon

> 2 cups flour

> 1/2 teaspoon vanilla

> Confectioners' sugar

> Preheat oven to 350 degrees. Mix together rhubarb and 1/2 cup sugar.

> Set aside. Cream shortening, remaining 1/2 cup sugar and brown sugar.

> Add egg and then stir in baking soda, salt, cinnamon and flour. Stir
