Banana and Sweet Potato Casserole

 

4 sweet potatoes

1 1/2 tsp. salt

4 tbsp. butter

4 bananas

3/4 c. brown sugar

1/2 c. orange juice

 

Cook the unpeeled sweet potatoes in boiling water until

tender, but firm.

Cool and peel and slice 1/4 inch thick.

In a buttered casserole, arrange alternate layers of the

sweet potatoes and sprinkled and dotted with butter, and

the bananas sprinkled with brown sugar.

Start with sweet potatoes and end with the banana layer dotted with butter. Add

the orange juice.

Bake in a 350 degree oven for 30

minutes or until browned on top. Serves 6 to 8.
