Guest guest Posted August 11, 2006 Report Share Posted August 11, 2006 Cider Ginger Beets 1 cup white sugar 1 tablespoon cornstarch 3 teaspoons ground ginger 7 medium beets 1 cup beet juice 1 cup apple cider 1 tablespoon butter 1/2 teaspoon salt 1 cup raisins Cook, peel, and slice beets. Save 1 cup of the beet juice. In a saucepan, combine sugar, cornstarch, ginger, cold beet juice, and cider. Cook over medium heat until thickened. Remove from heat. Add butter, salt, and raisins.
