I used to work in a restaurant that made falafels as one of the entrees. One thing I noticed was that they came out much better if you have more parsley in the falafel. You can also use cilantro.That way the oil gets into the inside and cooks it more inside. They have a lighter texture that way. I will post a recipe from scratch. Also if you make it from scratch or a box. Make it up and wait about 15 minutes and check the texture. usually it sets up like concrete and they need more water so add water.
