Guest guest Posted September 24, 2006 Report Share Posted September 24, 2006 I just love pumpkin in the fall and found a recipe in Rachel Ray's " Veggie Meals " that was quick, easy and very tasty. I have included changes I used to make it vegan. Debbie Pumpkin and Black bean soup From Rachel Ray- Veggie meals 1 T vegetable or canola oil 1 T butter (skipped this entirely) 1 medium onion, finely chopped 1 can (14.5 oz) veggie broth 1 can (14.5 oz) diced tomatoes in juice 1 can (15 oz) black beans, drained and rinsed 1 can (15 oz) pumpkin puree ½ c heavy cream (used Silk creamer – found with half and half in the store) 1 ½ t curry powder 1 t ground cumin 3 pinches cayenne pepper (1/4 t) Coarse salt to taste Heat a deep pot over medium heat. Add oil and butter. Add onion and sauté till tender about 5 minutes. Add broth, tomatoes, black beans, and pumpkin. Bring to a boil, reduce heat to low and stir in cream (Silk Creamer), curry powder, cumin, cayenne, and a few pinches salt. Simmer 5 minutes, adjust seasonings and serve.
