Rhubarb Bread with Nuts recipe Marilyn here

you go

 

 

Rhubarb Bread with Nuts

 

1 1/2 cups firmly packed brown sugar

2/3 cup vegetable oil

1 large egg beaten

1 cup buttermilk or sour milk

1 tsp. baking soda

1 tsp. salt

1 tsp. vanilla

2 1/2 cups flour

dash cardamom (optional)

1 1/2 cups chopped fresh rhubarb

1/2 cup chopped walnuts or pecans

1/3 cup white sugar

1 tbl. melted butter

 

Heat oven to 325 degrees, oil and flour two 8-inch loaf pans.

Combine brown sugar, oil and egg, blend well.

Combine buttermilk, baking soda, cardamom, salt and vanilla. Blend

well.

Add the milk mixture to the sugar mixture alternately with the flour,

beating well after each addition. Fold in the rhubarb and nuts.

Turn batter into the loaf pans.

Sprinkle top with the melted butter and then white sugar.

Bake 45 minutes or until inserted toothpick comes out clean.

Remove from oven, sit on wire rack for 5-10 minutes.

Remove bread from pans to wire rack to finish cooling.

Oh this looks yummy Donna! I'm going to see if my nephew wants to

bake with me after I pick him up from soccer camp today :) If he

doesn't, I'm making this anyway!
