Guest guest Posted August 20, 2006 Report Share Posted August 20, 2006 Apricot Pecan Balls 1 1/2 c. crushed vanilla wafers (38 cookies) 1 c. chopped pecans 1/2 c. powdered sugar 1/2 c. snipped dried apricots 1/4 c. light corn syrup 2 tbsp. apricot brandy 1/2 c. sifted powdered sugar In a bowl stir together vanilla wafers, pecans, 1/2 cup powdered sugar and the apricots. Stir in corn syrup and brandy. Using one level tablespoon for each cookie shape mixture into balls. Roll each ball in powdered sugar. Store in a covered container. Makes 3 dozen cookies.
