Guest guest Posted August 9, 2006 Report Share Posted August 9, 2006 Rhubarb Coffee Cake 1/2 cup margarine 1 1/2 cups sugar 1 egg 1 cup buttermilk or sour milk 1 tsp. baking powder 1 tsp. vanilla extract 1/2 tsp salt 2 1/2 cups flour 3 cups Rhubarb, thinly sliced Topping: 1 cup brown sugar and 1/2 cups nuts (chopped walnuts are excellent!) Mix margarine, sugar, egg, milk, baking powder, vanilla, salt, flour until well blended. Stir in the rhubarb. Pour into a 9 " X 13 " greased pan. Put on topping. Bake at 350 degrees for 45 mins.
