" ) It's traditionally made with taro leaves, but since they're impossible to find here, I use this version with similar results and it comes close and is delicious in it's own right. Shelly Palusami 2 lbs fresh spinach leaves, rinsed 1 medium onion, chopped 1 14 oz can coconut milk 1/4 tsp salt pepper, about 3 grinds of pepper mill or to taste Preheat oven to 350 degrees. Put coconut milk, chopped onions, salt and pepper in a bowl and briefly stir to combine. Put whole spinach leaves in a large dish (9 x 13 or larger) and gently push down to make fit. Pour coconut mixture evenly over spinach. Cover tightly with foil and bake for 15 minutes. Stir mixture, recover and cook another 15 minutes.
