Guest guest Posted August 26, 2006 Report Share Posted August 26, 2006 Curried Vegetables This is a quick and easy way to prepare vegetables while adding a spicy twist. You will need: ~ 1-2 teaspoons of yellow curry powder Oil – I usually use Olive oil but any kind can be used Your favorite Vegetables chopped – fresh or frozen is fine 1 medium onion Salt to taste Hot pepper (optional) To make: Pour enough oil to cover the bottom of your pan and heat. Add a little water to the curry to make a paste. Add the curry paste and heat until it starts to get brown. Be very careful that it does not burn. Add the onion and vegetables and stir until they are coated in the curry mixture. Add salt to taste and sauté until vegetables are cooked but not soggy. You may need to add hot pepper depending on the curry that you used (some tend to be hotter than others). Serve as either by it self as a side dish or put over rice or pasta. Enjoy!
