peeling yucca?

does anyone have a surefire way to easily peel yucca root? I am

majorly craving what I nicknamed " fried yucca balls " (oh how original)

but the frozen, peeled yucca just isn't as good as the fresh. The

problem, it's hard as heck to peel the waxy outside off the fresh

stuff. Anyone?

We use yellow rice instead of ground meat.

 

I have used white potatoes in place of the yucca and they are similar

but not the same.
