Lemon Graham Freeze 1 can (5oz) evaporated milk 1/2 cup sugar 2 Tbs lemon juice 4 drops yellow food coloring, optional 6 whole graham crackers Place milk in a mixing bowl; add beater to bowl. Freeze for 25 to 30 minutes or until soft crystals form around edges of bowl. Beat milk until stiff peaks form. Gradually add sugar, lemon juice and food coloring if desired; mix well. Place five graham crackers in an ungreased 11x7x2 inch dish; pour milk mixture over crackers. Crush remaining graham cracker and sprinkle over top. Cover and freeze until firm. Yield: 6 servings ~~~~~~~~~~~~~~~~~~~~ Refreshing Lemon Pie 1 can (14oz) sweetened condensed milk 1/2 cup lemon juice 1 Tbs grated lemon peel 2 to 3 drops yellow food coloring, optional 1 carton (8 oz) frozen whipped topping, thawed 1 graham cracker crust (9 inches) In a bowl, combine milk, lemon juice, grated lemon peel and food coloring; mix until smooth (mixture will begin to thicken). Fold in whipped topping; spoon into crust. Chill until ready to serve. If desired, garnish with mint leaves and or lemon peel strips. Refrigerate leftovers.
