Sometimes I cut the recipe in half since it makes so much, but this is a good one to take to any potlucks or picnics. It is really simple, but people love the flavor and the unique combination. Cauliflower Romaine Salad 1 cup dry bread crumbs 3 Tbs. butter or marg. 10 cups torn romaine 2 Tbs. grated parmesan cheese 1 Tbs. lemon juice 1 garlic clove, minced 1/4 tsp. salt 1/8 tsp pepper 1-3/4 cups coarsely grated cauliflower In a small skillet brown bread crumbs in butter; set aside. Place romaine in a large salad bowl. In a small bowl combine parmesan cheese, lemon juice, garlic, salt, and pepper. Pour over romaine tossing to coat evenly Top with cauliflower and reserved bread crumbs. Serve immediately.
