[recipe] Irish Peasant Soup

This is a recipe that an Irish lass shared with me

over on the quick vegetarian2 list.

It is simple yet pleasant,

just right for a peasant!

Oh those rhymes! *lol*

 

Irish Peasant Soup

 

4-5 medium potatoes

1 can stewed italian tomatoes (diced)

1 large can tomato juice or V8 juice

1 head of cabbage

1 large sweet yellow onion

 

red pepper, black pepper, garlic powder, salt, basil to taste

 

Shred cabbage, chop onion and potato (leave skins on potato)

and combine with tomatoes and juice. Spice to taste and cook for

approximately 1 hour or until veggies are tender.
