I make a veggie sandwich for picnics that everyone seems to like. Picnic Boule Get a boule (round loaf) of bread you like (I usually get whole wheat or sourdough, depending what's available if I haven't had time to make one). Cut it in half. Rip out some of the insides, but make sure not to pull a hole through to the crust. Save those bits for something else. Spread goat cheese or cream cheese on the bread halves (helps seal so it doesn't get soggy from the veggies). Spread your choice of tapenade (olive paste) or pesto. Top with grilled/roasted veggies - tomato, red bell pepper, summer squashes, asparagus. Close up the sandwich. Cut it into wedges, keeping it together, and wrap tightly in foil. Hadn't to one in 15 years since I moved away. Any way I made a Tomato Mozzarella salad that everyone liked. No real recipe, it was tomatoes, mozzarella cheese, cucumbers, kosher salt, some balsamic vinegar, basil oil. Don't really remember everything I put on it.. I just went thru my parents cabinets and found all sorts of things so I made a mixture and then let it chill over night. I do try to present a new recipe to share for our yearly " Memorial " picnic 4th Sunday in April which is a family reunion type gathering. I try to bring something different every year and something that will appeal to the non-vegetarians. Last year it was a mixture in rolled burritos and they all disappeared. A combination of sauted onions and some parsley in olive oil. Mix with diced green & black olives and feta cheese. Roll up in burritos and melt. The burritos are homemade - 1/2 white and 1/2 wheat flour with enough olive oil so that they are soft. I cut burritos into 3rds, so they were eaiser to eat.
