Irish Potato Salad 5-6 Yukon gold or russet potatoes 1 bunch green spring onions (chopped) 8 oz. sour cream 8 oz. mayonnaise (Veganaise is the best) 1/2 or more jar soy Bac O's bacon bits Peel potatoes, slice and cook until tender. Mix onions, mayo, sour cream and Bac'O's. Alternate in layers in a salad bowl. Potatoes and mayo mixture, endijng with mayo mixture on top. Chill well and serve.
