Here is a great dish for St.Patrick's Day or any

Celtic-Irish celebration meal. :)

 

Irish Herbed Potatoes

 

2-1/2 lbs potatoes, peeled and cut into wedges

1/2 cup butter, melted

1 Tbs lemon juice

1/4 cup chopped fresh parsley

3 Tbs chopped fresh chives or dried chives

3 Tbs chopped fresh dill weed or 3 tsp dried dill weed

1/8 tsp salt

1/8 tsp pepper

 

In a saucepan, cook potatoes in boiling salted water

until tender; drain. Combine remaining ingredients;

pour over potatoes and toss to coat. Serve immediately.

Yield: 8-10 servings

I like the sound of this recipe...but, I steam potatoes now...just tried it

last week when I cut little yellow potatoes into halves...large potatoes

would work better cut into fourths I would guess. They didn't over cook and

weren't water logged and didn't fall apart. I liked them much better. Just

thought I would mention it...probably all of you have already tried it.
