Irish Herbed Potatoes 2-1/2 lbs potatoes, peeled and cut into wedges 1/2 cup butter, melted 1 Tbs lemon juice 1/4 cup chopped fresh parsley 3 Tbs chopped fresh chives or dried chives 3 Tbs chopped fresh dill weed or 3 tsp dried dill weed 1/8 tsp salt 1/8 tsp pepper In a saucepan, cook potatoes in boiling salted water until tender; drain. Combine remaining ingredients; pour over potatoes and toss to coat. Serve immediately. Yield: 8-10 servings ~ pt ~ The air is like a butterfly With frail blue wings. Guest guest Posted March 14, 2006 Report Share Posted March 14, 2006 I like the sound of this recipe...but, I steam potatoes now...just tried it last week when I cut little yellow potatoes into halves...large potatoes would work better cut into fourths I would guess. They didn't over cook and weren't water logged and didn't fall apart. I liked them much better.
