Guest guest Posted September 23, 2006 Report Share Posted September 23, 2006 Rinse the beans, then fill a pot with water and bring to a boil. Add some Lima Beans and let boil for 5 minutes. Turn off your burner and leave on the burner for 1 hour covered. Then return to a boil and boil until tender. It will be about an hour to one and a half hours. Sometimes I add, during the last 1/2 hr of cooking, a diced onion, 1 T. oil, Salt, chopped Bell Pepper and 1 can of stew tomatoes, and a pinch of sage, oregano, and thyme. I eat it more like a soup this way...........Sometime I just add the diced onion, oil and salt. Lima's are so good for you. Candied Orange LIma Beans 2 Tbsp Butter 1/4 cup Honey 1 tsp Grated orange rind 4 cups Lima beans (large, cooked), drained Ginger, cinnamon, cardomom or nutmeg to taste In a large skillet, melt butter; stir in honey and orange peel. Add beans; cook and stir gently until glazed. Flavor with spices. Nutritional analysis per serving: Calories 150, Fat 3g, Calories from Fat 15%, Cholesterol 2mg, Fiber 4g, Sodium 30mg, Protein 5g. Luscious Lima Bean Soup a.. 1 pound dry lima beans b.. 4 cups water c.. 5 carrots, chopped d.. 1 leek, bulb only, chopped e.. 2 tablespoons minced shallots f.. 2 stalks celery, chopped g.. 4 cubes vegetable bouillon h.. 8 cups water i.. 2 tablespoons olive oil j.. k.. l.. Bring 4 cups of water to a boil. Add dry lima beans, and boil for 2 to 3 minutes. Remove from heat, and allow the beans to sit, covered, for 1 to 2 hours to soften. Drain and rinse until water runs clear, discarding bean water. 1.. In a soup pot, saute vegetables in olive oil until onions and celery are translucent. Add lima beans, and saute for another 2 to 3 minutes. 2.. In the meantime, bring 4 cups of water to a boil. Add the vegetable bouillon to the boiling water, and stir until dissolved. Add broth to the sauteed vegetables and beans. Add remaining water, and allow soup to simmer over a low flame for 1 to 1 1/2 hours. Serve steaming hot. Well I hope some of these help you use up all of those great lima beans.
