Guest guest Posted March 8, 2006 Report Share Posted March 8, 2006 My adaptation of a recipe " The Lowfat Jewish Vegetarian Cookbook " by Debra Wasserman. Published by The Vegetarian Resource Group. Syrian-style Okra with Dried Fruit (Serves 4-6) 1 pound okra, chopped 1 small onion, peeled and finely chopped 1 teaspoon oil 1 Tablespoon water 1 cup dried fruit (raisins, apricots, etc.)(chopped anything larger than a raisin) 3 blended tomatoes 1/4 cup lemon juice Stir-fry okra and onion with oil and water in a large frying pan for 5 minutes over medium heat. Add dried fruit, blended tomatoes and lemon juice. Simmer 15 minutes, stirring often. Serve warm or chilled. Quote Link to comment Share on other sites More sharing options...
