Mock Crab Cakes Redeux

 

I found one recipe for the mock crab in the Juice Pulp files. I

did not have some of the ingredients. Here is what I did.

 

3 cups carrot pulp

1/2 cup steamed beet water

1/2 onion. finely diced

2 cloves garlic, minced

3/4 cup fake Mayonaise

1 cup diced mung bean sprouts

1 cup finely chopped walnuts

2 tsp. dill weed

2 Tbsp. kombu powder

toasted sesame oil to taste

soy sauce to taste

 

roasted sesame seeds

 

 

Mix all ingredients together except for sesame seeds.

Top with sesame seeds and drizzle with cilanto garlic oil. We just

had 2 slices of tomato so we put those on. They made all the

difference in the world as the cakes were a little dry. I would put

1-2 diced juicy tomatoes in next time.
