Sheyen mentioned recently about the texture of beans being " dry " and

that is the reason she does not care for them. I too notice the texture

of beans and feel the same way. However I have found that often older

beans are dry even after being soaked and cooked, So it helps to buy

fresh when ever possible. Beans are such an important protein source

that we hardly can do without them. Hummus, and refried beans are the

perfect way to eat beans if one cannot find them fresh, (not canned). I

have recently found mixed soup beans in the frozen food section and

they seem to be fresher than canned. Most people think that taste is

the only thing that affects their desire for certain foods but often

texture plays a big part.

Some claim not to like sauteed onions because they are " slimy " .

Personally I love onions no matter how they are prepared. Okra is a

good example of a food that is " slimy' and therefore not liked by many

people. Fresh okra, soaked in salt water loses much of that 'slime' and

the real taste of Okra comes through.

Textures used to have the potential to bother me before

I went vegetarian some 10+ years ago. You then knew

(without getting too graphic) that a hard or rubbery

spot in your chicken nugget or burger was... well...

 

Once vegetarian though, I know it's just another plant,

so any texture is OK. :)
