I just roast it sprayed with olive oil (plain), or sometimes add a

little lemon pepper. Oh, and I usually have a few toasted pine nuts

in the salad too.

 

The dressing (just mix everything well):

 

1/4 tsp minced orange zest

2 tbsp orange juice

2 tbsp champagne vinegar or white wine vinegar

1/8 tspground cumin (even better if you can toast & grind some cumin

seeds)

1/4 tsp salt

2 tbsp light olive oil

 

 

Also good on jicama.
