Get a tub of firm or extra firm, freeze and thaw, the water will easily drain off of it and the texture will become chewy. Marinade and then baste with a brush of olive oil and grill. I went to Moe's Burritos today, (I have sworn off fast food, but Moe's and Pizza are too much to ask...) and had tofu on my burrito instead of chicken. It was so good, I bought tofu on my way home..I'll have to wait till this weekend to try it. DOes Tofu grill well?
