Arthelene's Cookie Bars -

These are a new favorite baked Cookie Bar of ours, that someone else sent in

to

the list, but I didn't see it in the files, so here is another copy of it.

It is so healthy and yummy.

Arthelene 's Cookie Bars

 

1/4 c. olive oil

1 c brown sugar or honey

2 egg whites

2 c oatmeal

1/2 c whole wheat flour

12 tsp salt

1/2 c sunflower seeds

1/2 c pumpkin seeds, chopped

1/2 c pecans, chopped

1/2 c choc chips (optional, I like it better without these added)

 

Beat oil sugar and egg whites together, .

 

Stir flour, oatmeal and salt together, add to above mixture. Stir

in remaining ingredients. It will be a stiff batter.

 

Press out on a sprayed Jelly Roll Pan, with your hands and bake 10 mins at

400. Cut

when still warm into squares, or cut before baking. These cookies bars

don't raise or spread.

I just noticed that it said 12 tsp. of salt, but I'm sure it means 1/2 tsp.

That is what we used.
