I chop the zucchini in my processor coarsely, and then I dry it well with many paper towel scrunches. put it in the paper towel and squeeze it many times, I have even used a regular kitchen towel for this. keep doing it until it is dryer. also, I posted a version of this recipe changed to my liking, and in that recipe I include oats, which also help sop up the moisture of the zucchini. hope all that helps, hugs, Chanda - akfral Saturday, August 05, 2006 8:38 PM Saturday night yummer dinner We went to a friend's house for a 'clean out the crisper' dinner. He made a great slaw with leeks, cucumbers, nasturiums and a simple slaw dressing. I made eggplant parmesan with an eggplant from my garden, and the crabless crabcakes I got off this list a while ago. I'm doing something wrong with them, they are too wet. But we all ate them up.
