I was debating making it like hashbrowns. I added extra bread crumbs, I'll

try some oats next time. My scallions were a little strong too. But, the whole

batch got eaten up. We tried some with Wasabi sauce on them too. AmyF

you need to dry them well. I chop the zucchini in my processor coarsely, and

then I dry it well with many paper towel scrunches. put it in the paper towel

and squeeze it many times, I have even used a regular kitchen towel for this.

keep doing it until it is dryer.

also, I posted a version of this recipe changed to my liking, and in that

recipe I include oats, which also help sop up the moisture of the zucchini.

Saturday night yummer dinner

 

 

We went to a friend's house for a 'clean out the crisper' dinner. He made a

great slaw with leeks, cucumbers, nasturiums and a simple slaw dressing. I

made eggplant parmesan with an eggplant from my garden, and the crabless

crabcakes I got off this list a while ago. I'm doing something wrong with

them, they

are too wet. But we all ate them up. Kids included, and our friend's kids

are sometimes picky.

 

What was everyone else up to? AmyF

wasabi sauce sounds good. I Do love horseradish too. do check out the alteration

to the recipe that I posted in the files.
