This is good cooked in the crockpot or on the stove. I had to name it the first time I saw the outcome. It's a warm the bones hearty soup. Yellow Submarine Soup 2 onions, coarsely chopped 4 garlic cloves, crushed 2 cups yellow split peas 1/2 tsp. thyme (dried) 1 tsp. oregano (dried) 1 tsp. salt (use salt to taste when soup is done) 1/4 tsp. cumin 1 tsp. pepper 1/4 tsp. crushed red pepper flakes 6 1/2 cups vegetable broth If making on the stove then saute the onion and garlic for a few minutes in a tablepoon ofolive oil until tender firm. Add other ingredients and bring to a boil, reduce heat to a low simmer and cover pan. Cook for 50 minutes, soup will be a nice rich thick soup. Salt to taste. If using the crockpot I place everything in the crockpot and let cook for hours on high and turn temp. to low for the last 1 or 2 hrs. I thought it was just a kind of nostalgic shout out to the '60's and Beatles and such! Silly me! I love the idea of the little baby yellow squashes as the " submarines " , even though I'm not super-crazy for yellow summer squash, it's something I do eat now and then. Fun to put the little ones in it--if I can find them anywhere or--hope, hope, hope!--can get a bush of them growing HERE! Thanks again for posting the recipe!
