Went to Save A Lot, and got everything on my list, and was really good with the expenses. Anyway, for supper was Onion pizza on French Bread, Mexican Pizza on French Bread, and sweet and sour green beans. Dessert was this Cherry fruit salad stuff. Reason it was on French Bread is because the only way Save A Lot does pizza dough is the package stuff where you add water, YUCK. And hubby loves pizza on French Bread, soooo..... Onion Pizza 1 medium white onion 1 medium red onion small can of mushrooms (minced) half bag of red/green/yellow bell peppers and onions Saute on VERY low for about 20 minutes, til all is soft Take French Bread, cut, pour olive oil on bread, then pour on some oregano, Italian seasoning, and parmesan cheese, spread veggies on top, spread a little bit of Cowboy Salsa on, and then top with cheese. Mexican Pizza Refried beans Cowboy salsa Cheese Put everything on the French Bread I then put the bread in the oven on about 375 til cheese melted. Oh and I had plenty of my onion mix left, so I had added some to hubbys Mexican pizza. Sweet and Sour Green beans (all right you guys are going to shoot me, had bacon in this, I said I was trying, lol) Bacon Onions saute until both are soft I had a huge can of green beans and potatoes from Save A Lot, added that, then added some vinegar and sugar, and just let that simmer, til flavors went thru. I just next time have to do this with no bacon, and cant do it with bacon bits, because I cant have soy either, OY. Cowboy salsa: this is the trick that is SO good (putting on the pizza hid the bean flavors, and hubby loves this stuff, says he could eat the salsa as a meal itself) Cowboy Salsa 1 can (15 oz.) black eyed peas 1 can (15 oz.) black beans, rinsed and drained 1 can (15 oz.) whole kernel corn, drained 1/2 cup onion, chppped 1/2 cup green bell pepper, chopped 1 can (4 oz.) diced green chiles 1 can (14.5 oz.) diced tomatoes, drained 1 cup Italian style salad dressing 1/2 tsp. garlic salt In a medium bowl, combine black eyed peas, black beans, corn, onion, green bell pepper, jalapeño peppers and tomatoes. Season with Italian style salad dressing and garlic salt; mix well. Cover, and refrigerate overnight to blend flavors. (I didnt follow recipe to exact as I didnt have some of the ingriedients, but pretty darn close) The Cherry fruit stuff, well it had called for Sweetened condensed milk, but all i had was evaportated milk, but adding THAT was a mistake, lol, but it was still good. c. cherry pie filling 1 can sweetened condensed milk 1 sm. Cool Whip 1 med. can chunk pineapple, drained chop chunks lightly 1 c. pecans Mix pie filling, milk, pineapple and nuts. Add Cool Whip. Refrigerate 24 hours. I had mixed nuts instead, and i had mixed fruit instead, and I didnt add the cool whip. But it was still good, lol. I am trying to be good, UGH.
