Guest guest Posted March 24, 2006 Report Share Posted March 24, 2006 I made this a few weeks ago. This was a mixture I made for enchiladas. It looked so good that I reserved some to eat as is. You could eat it cold or warmed up. It was by pure accident but I found myself a great summer recipe. I wish I had the exact amounts but as usual I just kinda winged it. The important part of the recipe is that most of the veggies were grilled (moreso smoked) and had a smokey flavor to them. Onions, grilled and chopped Bell Peppers, grilled and chopped Garlic, grilled and chopped Black Beans, (from can) rinsed and drained Corn, (from frozen corn mixture that included red bell pepper and celery - you could add fresh) Cilantro, fresh and chopped Chile Powder Salt Pepper Add as much of the ingredients as you want and mix. Eat warm or cold. You can add green chile peppers, cheese or whatever ingredients you like (green onion, salsa, enchilada sauce...). Pic... http://ph./photos/view/aded?b=21 S.
