I have a feeling it would work perfectly since dates are so sweet, it's worth a try. I plan of making it too. Since I ended up with 70 lbs. of organic raw sugar I will not like baking with the white sugar again, I still have 40 lbs. left......LOL This is a funny little cookbook, it's put out by some health organization in the early 90's, very basic recipes and when the sugar topic came up the other day, I thought it would be a good idea to send in the sweetener recipe. Please don't put a time frame or too much pressure on yourself becoming vegan, it's a good idea to reasearch and see how you can replace non-vegan ingredients, you have less chance of failure that way. I will remain a vegetarian, I love my butter, dairy I have no problem eliminating since I have cow's milk allergy, butter doesn't bother me though. I don't care for eggs but I do bake with them. Is it hard to find soy ice cream? It's now in our grocery chains. That's nice to see, there are a huge percentage of people that are not vegetarian but use these products.
