This cookbook is wonderful, so if you are fence-sitting on making the purchase, just jump on down and buy it. Cook this up and serve it over rice and sauted veggies or tofu/tempeh/whatever you are hungry for, and that will get you to make up your mind. I put my changes in [brackets] so you can either follow mine or try the recipe as it appeared in the cookbook. Enjoy! Gandhi's Curry Sauce 1 1/2 cups canned coconut milk 1 cup fresh cilantro leaves, loosely packed 1/2 cup water 1/4 cup sunflower oil ~ [i have used avocado oil] 1/4 cup soy sauce 1/4 cup maple syrup 2 garlic cloves, chopped ~ [i used 4] 2 Tbs. curry powder 2 tsp. grated fresh ginger ~ [i used more, but didn't measure] 1/2 tsp. crushed red chili (optional) ~ [i used it] Place all ingredients in a blender and purée.
