Guest guest Posted September 10, 2006 Report Share Posted September 10, 2006 BROCCOLI CASSEROLE 1 package (10 ounces) frozen chopped broccoli 1 1/4 cups lukewarm skim milk Cholesterol-free, fat-free egg substitute, equivalent to 3 eggs 1/2 cup grated Parmesan or Romano cheese 1/2 teaspoon salt 1/2 teaspoon ground nutmeg Preheat oven to 350oF. Grease 1 1/2 - 2 quart caserole; se aside. Cook broccoli according to package directions; drain. In small bowl, combine remaining ingredients; beat until well blended. Pour into prepared casserole. Add broccoli. Bake 25 to 30 minutes or until knife inserted into center comes out clean. Serve immediately. Makes 4 servings. Per serving: 115 calories; 13 g. protein; 3 g. fat; 25% calories from fat; 9 mg. cholesterol; 8 g. carbohydrates; 586 mg. sodium; 2 g. fiber.
