[recipe] Bean and Veggie Burgers ~ vegan

I just mixed up another batch of these so

I thought I would share the recipe again.

This was posted along time ago on my vegetarian

group [by Genie], but I only tried it for the first time

this summer, and now I am in love with how versatile

it is. You can use any combination of veggies or beans

you like, so just have fun with it. These are a great way

to use up produce that is past its peak. Enjoy. :)

 

Bean and Veggie Burgers

 

1 - 15 oz can kidney beans, drained and rinsed

1/2 cup uncooked rolled oats

1/2 cup chopped fresh mushrooms

1/4 cup chopped onion

1 small carrot, shredded

1/2 medium red bell pepper, chopped

1 garlic clove, minced

2 tablespoons ketchup

3/4 teaspoon salt

 

In food processor bowl with metal blade, combine all. Process with on/off

pulses until coarsely chopped. DO NOT PUREE. Shape mixture into 4 patties,

1/2 inch thick.

Spray broiler pan with nonstick cooking spray. Place patties on sprayed pan.

Broil 4 to 6 inches from heat for 10 to 12 minutes or until patties are

thoroughly heated, turning once.

Serve on a bun with your favorite extras!

To make a southwester burger, add 1/2 to 1 jalapeno chile, seeded and finely

chopped, to the mix.
