Sesame Crusted Tofu with Horseradish Mashed Potatoes

 

Ingredients:

2 lbs. tofu

1/8 Cup Black Sesame Seeds

1/4 Cup White Sesame Seeds

1 tsp Olive Oil

2 Tbsp Sesame Oil

Salt

White Ground Pepper

Fresh Black Pepper

 

Potatoes

4-6 Medium-Sized Potatoes, peeled and halved

12 oz. veggie broth

2 Tbsp ghee

1/2 cup milk

5 Tbsp prepared horseradish

 

Horseradish

 

1/2 cup grated horseradish

 

1/2 cup cider vinegar or light vinegar

 

1/4 cup prepared mustard

 

 

 

 

Marinade

2 1/2 Tbsp Balsamic Vinegar

1 Tbsp veggie Broth

1 Green Onion, finely chopped

1/2 Clove Garlic, crushed

 

Sauce

1/2 Cup San-J Soy Sauce

1/4 Cup Rice Wine Vinegar

1/4 Cup White Wine

1/8 Cup Pickled Ginger, Sliced

1/8 Cup Honey

1/2 Tbl Corn Starch

1 Tbl Water

 

Preparation:

Set aside 1 Tbsp of the broth for use in the marinade. Place the

remaining stock, the potatoes, and a pinch of salt in a stock pot. Add

enough water to cover the potatoes. Cover and boil for 30 minutes or

until done. Drain and add butter, whipping cream, white pepper, and

horseradish. Mix with a potato masher until fluffy. Do not use a

blender for food processor.

 

While the potatoes are cooking, prepare the sauce by combining the soy

sauce, rice wine vinegar, white wine, ginger, honey and water in a

small saucepan. Place the pan over a medium heat and bring to a boil.

Reduce the heat and simmer, stirring occasionally to keep it from

sticking. Cook over low heat for 20 minutes. Dissolve corn starch in a

bit of water and add to the sauce. Simmer for 5 additional minutes.

 

While the sauce cooks, prepare the marinade by mixing the balsamic

vinegar, olive oil , 1 Tbsp of the broth, chopped green onion, and

garlic in a bowl just large enough for the tofu steaks. Slice the tofu

into 1/4 inch slices.

 

Gently pour the marinade over the tofu and place in the bowl and cover

with plastic wrap. Set aside for 20 minutes.

 

Remove the tofu from the marinade and. Brush the tofu on all sides

with olive oil. Season with salt and black pepper. Dredge in a mixture

of black and white sesame seeds. Set aside.

 

Place the sesame oil in a pan over high heat. Bring the oil to the

point of smoking. Place the tofu in the pan and sear for 1 minute on

each side, or until the white seeds turn golden. Slice the tuna into

1/4 incu slices.

 

To serve, drizzle the sauce around the edge of two plates. Mound

potatoes in the middle of each plate, and surround with the tofu

slices. Drizzle more sauce on top of the tofu . Enjoy!
