LEMON RICE PILAF 2 teaspoons of butter or margarine 3 medium celery stalks, thinly sliced 3 green onions, thinly sliced 2/3 cups basmati rice 1 1/3 cups water 1 teaspoon grated lemon zest salt and pepper In large skillet with a cover, melt butter over medium heat and add celery, green onions and rice. Cook stirring occasionally for 5 minutes. Pour water into skillet, bring to a boil, cover and reduce heat to low. Cook for about 12- 14 minutes, until rice is tender.
