You sound like you are a big time canner. My mom has shown me how to a few

times over the years when she has come for a visit, but then it is a long time

before I have enjoy to need to do it and I've forgotten. : (

 

Did you see the pickle recipe I posted a while back. It is hot, sweet and sour

pickles. It is really a huge favorite at our home. An older lady at our

church used to make them for potlucks and to sell on the side. It was a big

favorite there too. LOL

 

I hope you get to try that recipe soon. I think you'll like it. Even my

husband, who doesn't like squash, loved it.

 

I used that square foot gardening method this year. I replaced all the soil in

the garden boxes 3 x 4 with 1/3 Peat Moss, 1/3 Vermiculite, and 1/3 Mushroom

Compost. It has turned out to be the best garden I have ever had. It is so

prolific and all the plants are growing so big. We are getting tons of Fork

Hook Limas, Eggplants, Pole Beans, Okra, Tomatoes(Yellow, Roma, Grape, Tommy

Toe, and Reg. Tomatoes), Pickling type Cucumbers, yellow squash, green peppers,

sweet banana peppers and butternut squash. The Butternut Squash were

volunteers , in an area just outside the garden boxes where we bury all of our

vegetable trimmings.

 

Here is some Prilosec for your heartburn from your hot pickles. LOL

it if you did. I would love for you to post it if you haven't already.

speaking of veggie gardens

 

We put up some pickles a couple weeks ago, and I stuck some jalapenos in

there. OH my are they hot!!! I love jalapenos in the raw in a wrap, but

combined

with the pickling spice they knock your socks off! I was literally crying.

Had to follow up with cheese and crackers to cut the spicy. But they were good

and I kept eating them (no teaching some people, huh?)

 

I have to try that zucchini tomato tart soon. I don't think DH put in any

zucchini in our garden, but my bookkeeper will have some soon, and my in-law's

neighbors too.

 

I made an awesome eggplant parmesan the other night (I think I posted about

that) and I'm having the leftovers for breakfast in the morning. And I've got

more eggplant and hot peppers coming, and it is about time to can tomatoes.
