Guest guest Posted April 7, 2006 Report Share Posted April 7, 2006 Serves one 1 courgette I onion 2 cloves garlic semi skimmed milk black pepper pasta low fat cheese a little olive oil 2 veggie stock cubes some plain flour I made this last night when I'd run out of food (or so I thought) it was delish!! Put pasta on to boil with one veggie stock cube in the pot. Chop onions and garlic and fry in oil on high heat for a couple of minutes. Chop courgette and add to the frying pan, after thirty secs lower the heat and leave for 5 mins. Add some milk to the frying pan (I didn't measure but it was prob about 1/2 a cup) Add the low fat cheese to the frying pan (I used two slices) Stir until the cheese melts on a low heat Leave for about 5 mins to reduce the sauce - watch out for milk boiling over if too hot Add flour to thicken as desired Add to the pasta YUM!!
