Guest guest
This is what i whipped together for my sub sandwich lunch spread today out of the Ananda Cookbook. i shrunk it down some as their recipe made way too much and i was afraid it wouldn't keep too well otherwise. i also changed out the yogurt their recipe called for and used Tofutti Sour Supreme; it was what i had onhand to use up, but i liked that it also makes this dish vegan. It tastes very yummy and i can't wait for lunch! What time is it now? *lol* Spicy Avocado Sandwich Spread 2 large avocados 1 Tbs. lemon juice 1/2 Tbs. soy sauce 3 cloves garlic, minced 3 Tbs. sour supreme 1 green onion [including top] finely chopped 1/2 tsp. cumin powder 1/2 tsp. chile powder Pinch of sea salt Mash and mix it all together. Spread on sub roll and add cheese or veggies of your choice. Yield: makes enough for two large sandwiches ~ pt ~ If the stars should appear one night in a thousand years, how men would believe and adore! ~ Ralph Waldo Emerson (1803-1882)
