Although I normally cook with fresh produce, I wanted this to go a bit quicker and went for the frozen variety of veggies. As I was perusing the 7000 packages of different frozen vegetables, I realized that there could be so many cool combinations to use with the veggies alone in this recipe. I even " almost " grabbed a bag of " stir-fry " veggies containing those flat greenbeans (name escapes me), baby-corn and others. Thought is certainly would look out of place but would be kind of cool. Go with any spice ya like. I had whole dried oregano that I wanted to use and really give it that type of flavor punch. The one thing I tried to keep in mind (this was my first crockpot lasagna) is that the original recipe called for 1LB. of that ground crud. I knew that would shrink when cooked (as I was trying to visualize the volume and the layering). I knew that the frozen veg. would shrink though not as much, however I ended up pushing the envelope (yes risky " Iron Chef " cooking here, LOL) by adding the entire package because I did not want to reserve any. From there I added half the fresh package of mushrooms (glad I reserved those though). Ended up (with a few pushes here and there) right at the top of the crock pot. Whew.
