Judy - Annie Littlewolf Wednesday, September 20, 2006 3:24 AM Falafels - new way Hi! When we lived in Madison Wisconsin, they used to have falafel wagons set up all over the place near campus. They served them with a " relish " made of cucumbers, green onions, and green peppers that had been marinating in and oil and vinegar salad dressings. They would put the falafel balls in the pita pocket, put the relish on top, and then - I'm not kidding here - they would pour some Catalina salad dressing over it all - and that just topped the cake- utterly delicious! Since we also don't fry, I make mine up and use non-stick aluminum foil in the oven and bake mine. I make little balls and then flatten them slightly and bake them till I think they are done. Meanwhile, I chop the cucumbers (dice) and dice the green pepper and green onions, and pour nonfat Italian dressing over that. When the falafels come out, we put about 3 in each pita half, drain the relish from the Italian dressing, and then pour on the fat free Catalina dressing -just like they used to in Wisconsin - SO GOOD!!!!!!!! much better than the tahini sauce. annie littlewolf Break on through to the other side.
