Guest guest Posted September 20, 2006 Report Share Posted September 20, 2006 Tarragon-Basil Vegetables 1 small bunch broccoli cut into flowerets and 1-inch pieces 1 small head cauliflower cut into flowerets 5 carrots, cut diagonally into 1/4 inch slices 1/3 cup margarine or butter, melted salt and pepper 1 tablespoon fresh basil, chopped or 1 teaspoon dried basil 1 tablespoon fresh tarragon, chopped or 1 teaspoon dried tarragon 2 cloves garlic, finely chopped 2 small onions thinly slice and separated into rings Heat oven to 400 degrees. Arrange broccoli along one side and cauliflower along the other side of an ungreased rectangular baking dish (13x9x2 inches). Arrange carrots down the center between the broccoli and cauliflower. Drizzle with margarine and sprinkle with salt, pepper, basil and tarragon. Arrange onion rings on top, cover with foil and bake about 30 minutes. Serves 12. My Notes: This is great for the holidays, I try and use fresh tarragon because its not as strong. I have also used green beans in place of the cauliflower and it worked wonderfully. Enjoy.
