Guest guest Posted September 20, 2006 Report Share Posted September 20, 2006 As usual I don't have a recipe but an outline. :-) 1 hubbard squash rice 2 cups veggie broth salt/pepper to taste First I cut the squash in half and " gutted " it. I then roasted it in a 400 degree oven on an oiled pan until it was soft and a fork would go through it. I then cut it into little pieces and peeled it. I put this in my food processor along with the broth and about a cup of rice. I pureed this until the squash bits were smooth. I seasoned this with salt and pepper and heated the soup through on the stove. I topped the soup with homemade croutons. Enjoy!
