Guest guest
Here is a yummy appetizer recipe that I like to make for game nights. Even people who are not big fans of broccoli will usually enjoy these. I like them cold the next dat, too; that is if there are any leftover. They make a delightful addition to a lunchbox for work or school. Broccoli Bites 2 packages (10oz each) frozen chopped broccoli 2 cups crushed seasoned stuffing 1 cup grated cheese [any kind you prefer] 6 eggs, lightly beaten 1/2 cup margarine, softened 1/4 tsp garlic powder 1/2 tsp salt 1/4 tsp pepper Cook broccoli according to package directions, drain and place in a bowl. Add the remaining ingredients; mix well. Shape into 1-inch balls. Place in a greased 15x10x1 inch baking pan. Bake at 350F for 11 to 12 minutes or until golden brown. Or place in a single layer in a freezer container and freeze for up to one month. Yield: about 5 dozen To use the frozen appetizers: Place in a greased 15x10x1 inch baking pan. Bake at 350F for 18 minutes or until golden brown. ~ PT ~ We must learn the difficult lesson that the future of mankind will only be tolerable when our course, in world affairs as in others, is based upon justice and law rather than the threat of naked power. ~ Albert Einstein (1879-1955), in a letter for the Gandhi Memorial Service
