I made it a little less healthy Even though it's in the files, I'm reposting the recipe with my changes. Lovin' this group!! Tomorrow I'm trying Donna's Cosmic Wheels pasta salad. Shelly from How It All Vegan's Mashed garlic potatoes with Kale My comments in 3-4 Medium potatoes, roughly chopped [i added 3 carrots, chopped, to the potatoes and boiled them together] 1 medium onion 4 garlic cloves, minced 2 tbsp. olive oil 2 cups Kale, chopped 1/2 cup soy milk [i used rice milk] 2 tbsp. flax oil [i used Earth Balance margarine instead plus a heaping soup spoon scoop of Tofutti sour cream] 2 tbsp. Braggs [i used 1 tbsp] pepper (to taste) In a large pot of water, boil the potatoes until they can be pierced easily with a fork. In a medium sauce pan saute the onions and garlic in the oil on medium heat until the onion becomes translucent. Add the kale and cover the pan with a lid. Lower heat and simmer for 5-10 minutes or until kale becomes soft. Set aside. When potatoes are ready, drain and place them in a large bowl. Mash together with milk, flax oil, Braggs and pepper.
